Zesty Chicken & Rice
2/3 cups uncooked regular rice
1 can French's Fried Onions
1 3/4 cup chicken bouillon (liquid)
4 boneless chicken breasts
Bottle of Creamy Italian Salad dressing
1 bag frozen veggies
Preheat oven 400.
Spray casserole dish with non-stick spray.
Combine uncooked rice, 1/2 can of Onions. Pour bouillon over rice mixture. Arrange chicken breasts on top. Cover the chicken in Salad dressing..not a lot, but cover it.
Bake, covered for 30 minutes.
Pour in the veggies around the chicken, covering the rice. Bake, UNCOVERED, 20 to 25 minutes or until the chicken and rice are done.
Top chicken with the remaining onions, bake, uncovered, 1 to 3 minutes, or until onions are golden brown.
Only takes about 5 minutes to get this in the oven. Another one of the Ex's favourites!

Killer Meatloaf
1 cup breadcrumbs
1 egg
2tsp salt
1/2 tsp pepper
onion, chopped
1/4 cup ketchup
3/4 cup milk
1/4 cup fresh chopped parsley
1 lb hamburger
Oven at 350.
Mix everything and put into prepared pan.
Bake for 1 1/2 hours.
My brother-in-law and EX husband swear this meatloaf put them both in the hospital after they ate it, two different meals. But the brother-in-law had a virus in his heart that did, and the EX had gall stones. Wasn't the meatloaf at all, but just perfect timing! LOL. So, we changed the name!! It's now a family joke.

Annie's Mexican Nacho Dip
1 small tub cottage cheese
1 pkg Old El Paso Nacho Cheese Powder
1 pkg (bar) Philadelphia Cream Cheese
1/4 cup milk
Mix ingredients well with mixer. Pour into 9X13 casserole dish. Add in layers:
Diced tomato
Green onion, chopped
shredded lettuce
shredded cheddar cheese
Refrigerate with a cover.

Hamburgers & Soup
1 lb hamburger
1 egg
2 slices white bread, diced
1 tbsp wet mustard
1 onion, chopped
salt and pepper, just a sprinkle of each
1 can cream of chicken soup
1/2 can of milk
Mix 1st ingredients well, and divide into patties (good sized ones)
Brown on stove top, well. Turn over and brown other side.
Drain off any fat and reduce heat.
Mix soup with milk. Pour over hamburgers. Cover and simmer slowly for 1/2 hour.
Quick and easy to make, never had any complaints!!

No Peek Chicken
Preheat oven 325.
1 cup rice
1 can cream of chicken soup
1 can cream of celery soup
1 tin water
1 tbsp butter
Mix well. Heat and pour into a greased casserole dish.
Add boneless chicken breasts on top.
Sprinkle with 1 pkg of French Onion Soup mix.
Cover with foil.
Don't peek for 2 hours.

The Best Banana Bread In The World!!
1 1/2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup shortening
3/4 cups of sugar
2 eggs
1 1/2 cups mashed ripe bananas(ususally more)
2 tbsp grated orange rind.
Oven at 350
Combine all dry ingredients, set aside.
Cream shortening and sugar well, add eggs, beat till fluffly, usually 10-20 minutes.
Add bananas and orange rind.
Let stand 5 minutes.
Add dry ingredients slowly, a bit at a time.
Put into prepared loaf pan. I flour with the dry ingredients.
Bake approx 1 hour.
I normally double this recipe and make 2 loaves, also makes great muffins. If making muffins, bake for 20 minutes then check, if not done, recheck every 5 minutes.
One Christmas, I made about 45 Christmas Tins, with muffins and cookies in them. Ended up baking 450 muffins and 4000 cookies. My friends all loved it!

Eclair Cake
2 boxes French Vanilla Pudding, large size
3 cups milk (skim for low fat)
8 ozs cool whip (low fat)
graham crackers
Chocolate sauce
Mix pudding and milk til thick
Add softened cool whip
Layer graham crackers on bottom of 8x8 pan
Pour 1/2 pudding mixture on graham crackers
Layer more graham crackers
Pour remaining pudding mixture on top
Refrigerate overnight
Just before serving,,garnish with desired amount of chocolate sauce..
If using skim milk and low fat cool whip,,this dessert is almost fat free..

Ridin,
The recipes from that site have all been used in various magazines, most from Good Housekeeping and also, people who have used the recipes can comment on them and you can see if people who have tried them have enjoyed them or not. None of the recipes are "unused". They have all appeared somewhere at sometime. Other sites may not be the same, but this one is recommended by all my chef friends.

Becareful using recpies from the net, we stay away from them at school, most are not kitchen tested( although some are ) good cookbooks and recipies from friends are the best.
Just add a pinch here and dash there, and make it your oun.......

Just as a hint. Look at the website www.epicurious.com You can get all osrts of recpies for ALL kinds of food and its free. I think it has something like 16000 recipes or something like that. You can find anything in there and find comments on the recipes and changes other cooks made. I love that site and its been great for me.
