OK>..here's two I promised someone in chat last night. These are great for using up all those extra beets, carrots, and Zucchini from the garden in the summer. You can grate and freeze the zucchini, but the beets HAVE to be fresh. Zucchini Brownies 1/2 cup butter or oleo 1/2 cup oil 1 3/4 cup sugar 2 eggs 1 t. vanilla 1/2 cup buttermilk 2 cups grated zucchini 2 1/2 cups flour 4 T. cocoa 1/2 t. baking powder 1/2 t. salt1 t. soda1/2 t. cinnamon 1/2 -1 cup choc chips. nuts Cream butter, oil, and sugar. Add eggs, buttermilk, vanilla, and zucchini. Beat well. Stir in dry ingredients. Pour into greased 9x13 pan. Sprinkle top with chips and nuts. Bake at 3225 for 40-45 minutes. This freezes well. Beet & Carrot Cake 3 eggs 1 1/2 cups sugar 1 cup oil 3 T. hot water 1 cup raw ground beets 1 cup ground carrots 2 cups flour 1 t. cinnamon 2 t. baking powder pinch of salt Beat egg whites till stiff. Mix egg yolks with all ingredients except egg whites. Fold in egg whites. Pour into angel food cake pan or bundt pan. Bake 60-70 min or 9x13 pan for 50-60 min. at 350.

i have 2 great dips. first. one can of hormel chili-mix with an 8 oz pkg of softened cream cheese in a small casserole dish. sprinkle with cheddar cheese on top. bake 350 abt 30 min till bubbling. serve with tortilla chips. second. it sounds awful but it tastes fantastic. one 8 oz can of artichoke hearts cut up, 1 cup of mayo, 1 cup parmesan cheese. bake at 350 abt 30 minutes-till bubbly . serve with trisket crackers or hunks of bread. anytime i serve these theres never any leftover!

Willie, I was wonderin if I can come to your house for meals from now on? Or perhaps we could set up kind of a meals on wheels program? In the event that doesn't happen, guess I'll have to start cookin. I have to go grocery shoppin as we have beer and condiments in the fridge. What can I buy that will give me some variety, is easy and fast to make, and doesn't require many dishes that aren't paper? Tired of all the pre made chicken and beef dinners and that. Want something different without having to stock the fridge with a bunch of stuff that just goes bad. We cannot keep many vegetables or other perishables typically because they tend to go bad before we eat em. Gotta remember, 2 young bachelors here.

tater tot casserole-my kid's most requested 1 bag tater tots 1 block philly cream cheese 1 small container sour cream 1 can cream of mushroom 1 bag of shredded yellow cheese a little milk a little butter melt some butter and the cream cheese, stir in sour cream and mushroom soup, throw in the tater tots, add enough milk to cover the tater tots...bake at whatever temp. goes with your main dish, cook time is not critical, as everything is already cooked when you start, add cheese to melt as topping. You just can't mess one this up, i never make it the same way twice...substitue hash browns for tater tots, add leftover sausage gravy in place of soup, bacon grease in place of the butter, or just add sausage, hamburger or ham chunks for more flavor... green chiles or whatever for spice...have even cooked this over the campfire and on the grill...let your imagination run...all ingedients can be altered to taste or to whatever you have on hand!!! ;) beckie

Old Fashioned Apple Crunch 1 cup brown sugar 1 tsp cinnamon 8 tart apples 1 cup sugar 1 cup flour 1/2 tsp salt 1 tsp baking powder 1 egg, beaten 1/2 cup melted butter Combine brown sugar and cinnamon. Peel and slice apples; place in greased baking pan; sprinkle with 1/2 the brown sugar mixture. Combine sugar, flour, salt and baking powder; stir in egg until mixture resembles crumbs. Spread over apples; sprinkle with remaining brown sugar mixture. Pour butter over top. Bake at 350 degrees for 40 minutes or until golden brown. Makes about 6 to 8 servings. My coach's wife made this for a pot luck trail ride and it was gone in 5 minutes! It is really easy to make! Enjoy. Annie

These are the world's best chocolate chip oatmeal cookies. Wholesome Oaties (that was the name on the bag of sugar, but I can't think that anything about them are really wholesome) 1 cup butter (I use half margarine and half butter) 2 cups granulated sugar 2 large eggs 1 tablespoon molasses 2 teaspoons vanilla 2 1/2 cups flour 2 teaspoons cinnamon 1 1/2 teaspoons baking soda 1/2 teaspoon salt 2 cups quick oats 2/3 cup raisins 2 cups chocolate chips 1 cup chopped nuts Cream together butter and sugar;add eggs, molasses, and vanilla. Combine flour, cinnamon, soda, and salt; gradually add to creamed mixture. Mix in oats, raisins, nuts, and chocolate chips. Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 350 for 12 min. or until light brown. Makes 6 doz.

Green Chile I do this in and iron kettle either on the fire or stove top. 3 lbs jalepeno 5 pounds pork or chicken (cut in cubes) 2 big cans chicken stock 4-6 peeled/diced taters 1 head garlic/minced 1 huge onion/diced 3-4 tablespoons bacon grease (bacon fat rules) black pepper ground chipotle corn starch boil taters in 1 can of stock. same time, roast peppers on charcoal grill or open fire until mushy and skin peeling. mash soft taters with masher in stock peel peppers and slice into pieces coat meat with chipotle, black pepper and possibly some salt (chicken only) dump meat in iron pot with hot bacon grease and brown fast and hot drop temp and add onion when meat starts to cook and brown stuff comes loose add garlic cook until meat is white add stock/tater mixture bring to a boil and add peppers simmer 2-3 hours ........... if not thick enough (from the taters) add a couple of spoons of starch mixed in cold water to boiling soup serve with thick yellow corn chips, dallop of sour cream on the side and cheddar/jack on top Killer!!!!

This is a trail ride eeeeaassy. TACO SOUP 2 lbs hamburger (cooked and drained) 1 medium onion chopped (cook with hamburger) Add: 2 cans hominy (undrained) or corn 2 cans pinto beans (undrained) or black beans 1 can Hunt's Mexican style tomatoes 1 pkg. Taco seasoning 1 pkg dried Ranch dressing mix Combine all...heat and enjoy I serve with cornbread. Susan

Oven-Easy Beef & Potato Dinner 4 cups frozen hash brown potatoes, thawed 3 tblsp vegetable oil 1/8 tsp pepper 1 lb hamburger 1 cup water 1 pkg brown gravy mix 1/2 tsp garlic powder or garlic salt 1 pkg frozen mixed veggies, thawed and drained 1 cup shredded cheddar cheese 1 can French's Fried Onions Preheat oven 400. Spray casserole dish with non-stick spray. I use an 8X12 dish. Combine potatoes, oil and pepper. Firmly press potato mixture evenly across bottom and up the sides to form a shell. Bake, uncovered, for 15 minutes. In a large skillet, brown hamburger and drain fat. Stir in water, gravy mix, and garlic; bring to a boil. Add mixed veggies; reduce heat to medium and cook, uncovered, for 5 minutes. Remove from heat and stir in 1/2 cup of the cheese and 1/2 can of the Onions. Spoon into the hot potato shell. Reduce oven temp to 350. Bake, uncovered for 15 minutes or until heated through. Top with remaining cheese and Onions; bake uncovered another 5 minutes or until onions are golden brown. Made this a lot for big pot luck dinners, and for the EX. Also, its great for left overs, after being in the fridge a few days! Enjoy, Annie
