Michelle, You did not get as many responses as I thought you would when I first saw your question.
I assume you are wanting one saddle to use on several different horses? There are several things to consider in choosing a saddle, types of riding, size of rider and of course the shape of the horse along with other considerations. You mention a young colt and that means he will change in the next 2 or 3 years. We ride lots of horses here and we have quite a few saddles and several types. Normally a cutting horse saddle is better for multple horses because of how they are built. Most of those sit high over the withers. Roping saddles tend to have more of a snug fit and don't work well for a high withered horse and in my humble opinion the withers is the most critical to fit.
Looking at the pics on your site, I didn't see any set high at the withers and that will make your choice a little easier. You can do a lot of correcting with padding but keeping the pommel from pressuring the withers is critical.
