Corn Dip 3 cans Mexicorn 1 cup mayo 2 cups sour cream 1 tsp cayenne pepper 5-6 green onions, chopped 2 tsp cilantro 1-2 cups shredded cheddar cheese Mix all ingredients together, chill, serve with corn chips, etc. Is better the longer it sits.

Recipe is from Thunder Roadhouse Restaurant owned by Dwight Yoakum This recipe is vegetarian, so add meat or poultry of choice as desired Serves 20 1/4 cup olive oil 1 lb diced onion 1 lb diced red bell pepper 1/2 cup minced garlic 2 lb poblano chile 1/4 lb tomato paste 3 Tablespoon ground cumin 1 Tablespoon cayenne pepper 2 Tablespoons chile powder 1 Tablespoon white pepper 3 Tablespoon salt 1 bay leaf 96 ounces diced tomatoes 1 1/2 gallons vegetable (beef or chicken) stock 2 lbs uncooked kidney beans 2 lbs uncooked black-eyed peas 2 lbs uncooked pinto beans Preheat large stock pot over high heat and add oil heating for 5 minutes. If meat is used, add and brown in oil. Add onion and garlic, stir and cook 5 minutes then add bell pepper. Stir and cook 5 minutes then add poblanos, tomato paste and seasonings. Stir well to release spice essence. Add tomatoes, stock and beans. Cover and bring to boil, stirring every 20-30 minutes for 4-4 1/2 hours.

Quickie meal... 2 regular avocados about 5 slices, lean ham one small tomatoe one small, yellow squash salt/pepper to taste sour cream bleu cheese salad dressing dice avocado, tomato, squash, and ham. combine in a bowl, add a dollop of sour cream, dressing, salt/pepper. mix well...enjoy

Mom's Blueberry Cake I halfed this recipe and used 3 eggs and it made two 8" medium thin cakes. 1 cup butter, 3 c. brown sugar, 1/2 cup white sugar, 5 eggs, 4 1/2 cups flour, 4 rounded tsps baking powder, 1/2 cup milk, 2 pints blueberries, 2 tsps.vanilla, 1/2 tsp. nutmeg, 1 tsp, cinnamon Cream butter , add sugars and mix, add eggs, alternate flour and milk with egg mixture. Add spices and then fold in blueberries until they are all through cake. Grease pans and flour. Bake at 350 for 45-50 minutes or until done. Makes a 9x13 and 8x8 cake. Or I used two 8 inch rounds and made half the recipe and it came out a little flatter than a boxed cake but plenty good for putting ice cream on while still warm. Enjoy.

Found these on another list. Helpful cooking tips... Peel a banana from the bottom and you won't have to pick the little "stringy things" off of it. That's how the primates do it. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster. Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold! Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking. Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking. To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up. For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set, for a wonderful minty frosting. Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic. Leftover snickers bars from Halloween make a delicious dessert. Simply chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream. Reheat Pizza - Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works. Easy Deviled Eggs - Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up. Expanding Frosting - When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size.. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving. Reheating refrigerated bread - To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.

Marsala Chicken with Wild Rice...Take as many chicken pieces as you require for serving...remove the skin..bake in a 350 degree oven about an hour, basting with melted butter and Marsala wine. In the meantime..cook wild rice in a mix of chicken broth and wine..about half and half...add oregano, garlic powder, onion bits..and mushrooms to the rice as it boils. Time it to where the rice and the chicken will be cooked within the same period. As it starts to be completed..melt a jar of red currant jelly in a saucepan..stirring over low heat...Put some cornstarch in a cup of cold water, mix it up and pour slowly into the melted jelly to make a sauce...Arrange the baked chicken on top of a platter of wild rice..and drizzle the melted red current jelly sauce over the chicken....I had a date eat 3 plates of this...LOL...its yummy.....Shadow...

Pico De Gallo (best and easiest doggone salsa recipe there is) 6 roma tomatoes, diced 1 onion, preferably white, diced 3 jalapeno peppers, diced salt to taste (I like it with a heaping tsp of kosher salt) Mox together and enjoy. Can be made in a food processor, but I like the texture better when hand diced. Makes THE BEST quesadillas, just grill a tortilla, put grated cheese and pico de gallo on half of it, fold over, brown it and eat it. Also excellent for making chilaquiles.

Any of ya want some really good dessert! Try this, its very simple, and most people have all the ingredients right in their pantry; Apple Dapple Cake 3 eggs 2 C. sugar 1 1/2 C. flour, plain 1 tsp baking soda 1 tsp salt 1 tsp cinnamon2 tsp vanilla 1 C. chopped nuts (any kind) (lol, sorry) 3-4 C. finely chopped apples (Golden or McIntosh) or any sweet type apple Then cream together first 3 ingredients. Sift all other ingredients together; add to creamed mixture. Pour into greased & floured 13x9x2 pan. Bake 45-50 minutes at 350 deg. You can do anything with this, like, serve w/ice cream, top with whipping cream, or what ever you like. Kiki
