Red Eye Gravy.............. Red eye gravy is generally called this because of two things.. One: its called "red eye" because of the bone that is in the ham slice that gives the ham flavor to the gravy.. and it looks a bit like an eye..kind of reddened on the edges.. Two: the gravy is made using strong coffee... the old Southern cooks who dreamed this gravy up, wasted nothing.. they'd toss the coffee left in the pot from the early morning into the skillet to make things "stretch" further..and to add flavor. So, here is the recipe.. First, have a nice piece of ham steak that you sizzle in the skillet, rendering the fat, from it. Remove the ham slice, and to the grease in the pan, add two tablespoons of butter. Stir it all together, and then, add about 1/4 cup of water, and about 1/2 cup of strong coffee...stirring to combine the fluids... then, add the ham slice once again for a few minutes. Serve up the ham slice on a nice platter and pour the gravy into a gravy boat or laddle over the ham slice ..your choice. Very tasty.... Smokeymtshadow.........................

Here ya go Cloudy.. My grandmother brought this recipe with her from Germany and it was a Christmas tradition. I made 6 of them this year for Christmas presents. It is always a hit!!! Let me know how it turns out. *~*Copper*~* ~~~Pumpkin Cheesecake Jelly Roll~~~ 3 eggs 1c. sugar 2/3 c. pumpkin 1 tsp. lemon juice 3/4 c. flour 1 tsp. baking powder 2 tsp. cinnamon 1 tsp. ginger 1/2 tsp. nutmeg 1/2 tsp/ salt 1 c. chopped pecans 1/2 c. powdered sugar Beat eggs 5 min. on high speed. Beat in sugar. Stir in pumpkin and lemon juice. Sift and fold in the remaining dry ingredients. Spread mixture into greased and floured 15"x10"x1" jelly roll pan. Sprinkle on pecans. Bake at 375 degrees for 15 min. On a clean dry kitchen towel, sprinkle powdered sugar. Take cake out of the oven and let cool for 10 min. Turn out cooled cake onto the towel. Starting at the narrow end roll the cake and towel up. Let cool to touch. ~~~Cream Cheese Filling~~~ 1 c. powdered sugar 6 oz cream cheese 4TB margarine 1/2 tsp. vanilla Beat all ingredients together until creamy. Unroll and spread filling onto cake. Reroll just the cake. Wrap in saran wrap and chill until firm. Slice, serve and ENJOY!!!

Okay...per the requests..here is the recipe for No Bake Choclate Coconut Cookies: 2 C. Suger 1/2 C. Milk !/2 C. Butter 1/4 C. Cocoa 1/2 C. Creamy P'nt Butter 3 C. Quick Cook Oatmeal (plain-uncooked) 1/2 C. Coconut 1 tsp. Vanilla Mix first four in large saucepan and bring to a Rolling boil. Remove from heat and add remaining ingred's. Mix well and drop by spoon onto waxed paper (or waxed side of freezer paper is even better). Let set unill firm and cool. Makes apx. 2 1/2 dozn. **Note: Add vanilla as soon as "rolling" boil subsides. Is a good idea to premeasure the other three inged's as you need the heat to blend properly. You need to work fast once you start "dropping". Is one of my families favs. Enjoy! D'na

So Good !!!! Chop Suey Cake 2 c. flour 1/2 t. salt 2 c. sugar 1 c. pecans 2 eggs 1 ( 20-oz) can crushed pineapple, undrained Preheat oven to 350. Combine all ingredients, mix well. Bake in well-floured and greased 13x9 inch pan for 35-40 minutes. While cake is baking prepare frosting. 1 (8-oz) pkg cream cheese softened 1 stick margarine, softened c c. powdered surger 2 T milk Combine all ingredients: beat until smooth. Spread on cake while hot. Enjoy! This was served in a Restaurant here, an was a big hit, even called in to take the whole cake home ~~~

Coffee and Spice Drops Mix together thoroughly; 2 cups brown sugar 2 eggs Stir in 1/2 cup cold coffee (freeze for 1/2 hour) Sift together and stir in: 3 1/2 cups flour 1 TSP Bakin Soda 1 TSP Nutmeg 1 TSP Cinnamon Chill at least 1 hour, drop rounded TSP about 2 inches apart on lightly greased cookie sheet. Bake until set, just until when touched with finger no imprint remains. Bake 400 degrees, 8-10 minutes. Makes one batch....I double it... Enjoy with cup of coffee or milk... Phil
