Take One Cowboy, Marrinate in Beer, roll in flour and Fry.
Seriously though take one tom turkey, marrinate in wine over nite (nite before), heat oven, put turkey in cooking bag with seasonings of yer choice, bake. Corn Bread dressing, lima beans, green bean casserole, and potatoes are good with this (or what ever tickles your fancy).

AMISH BROCCOLI SALAD
1 lg. head broccoli, broken into small flowerettes
1 med. onion or about 1/2 c. chopped onion or use 1/2 cup dryd oniorns
8 to 10 slices bacon or bacon bits
1 c. mayonnaise
1/4 to 1/2 c. sugar
2 to 3 tbsp. vinegar (optional)
1/2 c. raisins (optional)
1/2 c. nuts (optional)
Cut bacon into bits and fry crisp if used . Mix together mayonnaise, sugar, vinegar, bacon and raisins. Pour over broccoli and onions. Mix well. Let stand at least 1 hour in ice box or more before serving

For all you health nuts out there that want a quick fix dinner - I concocted this the other night (after raiding the fridge) and turned out wonderful! Works for the Vegetarian as well as the meat lover. All it takes is some imagination and you can call it yours!
"The Portabella Fling"
Chop up some of the following or substitute what's in your fridge:
Bell Pepper (red adds great color)
Onion
Smoked Pork Chop or shrimp, or your choice!
Fresh Spinach
Zucchini
Any veggies you have on hand..
Toss all of the above together.
Add a 1/2 Cup of grated cheese to every cup of the above mix. Goat cheese is great with the shrimp except you might use a little less.
Take a big Portabella Mushroom, turn it upside down on a microwavable plate and then spoon at least 1-1/2 cups of the veggie mix on it.
Microwave for 2-1/2 minutes. Dice up some fresh tomato and add to the tops and Voila! Dinner! O.K. - it may not be pretty - just drain off the excess liquid and if you want pretty just transfer to another plate. Pour a glass of Shiraz and dinner is ready!
Haven't tryed broiling it yet but am sure that would work as well as grilling it in some closed aluminum foil.

Squash Medley...
i small can, green chilis
1/4 cup sliced, pitted, black olives
1 can, diced portabello mushrooms
black pepper to taste
2 tsp paprika
1 tsp crushed red pepper
2 small to medium yellow squash (or zucchini)
individual packet of small, baby carrots
1/4 cup raw honey
1/4 cup butter
1 Tbsp of roasted garlic
1 diced/chopped green onion
place all in a 1 qt. sauce pan, cover, cook on low heat till squash and green onion are tender.
For extra flavor, chopped pecans can be added...
serve over rice, or Lipton's instant Garlic Mashed potatoes.

banana nut bread 1 cup butter or margarine
2 cups sugar
4 eggs
1/4 teaspoon salt
2 teaspoons soda
4 cups flour
6 large bananas, very ripe, mashed
1 cup finely chopped pecans
PREPARATION:
Cream together butter and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients together; add to creamed mixture. Stir in bananas and chopped pecans.
Pour banana nut bread batter into 2 well-greased loaf pans; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean.

Portobello Steak Sauce
1 1/2 lbs of whole portobello mushroom caps, cut into 1/2 inch dice
2 tablespoons unsalted butter
sea salt
frshly ground black pepper
1/4 cup shallots or red onion
2 Tblspoon sliced garlic
1 1/2 teaspoons minced, fresh thyme; or 2 tsp of dried, ground thyme
1 cup dry red wine, or beef broth
1/2 cup flat-leafed parsley, chopped
Heat a large skillet over high heat. Add the olive oil. When the oil is hot, arange the mushrooms in a single layer. Don;t Stir!! Let them sizzle until they have caramelized on the bottom, about 2 minutes. If you toss them too aoon, they will release their liquid and begin to steam. When the bottoms are caramelized, toss the mushrooms and continue to cook over high heat for 5 minutes.
Add the butter. Continue to cook, stirring occasionally, until the mushrooms are browned, about 2 to 3 minutes. Season with salt and pepper, add the shallots and garlic. Saute until the garlic is lightly browned, about 2 minutes. Add the thyme, reduce the heat slightly, and add the wine or broth, and simmer until the mushrooms are glazed with sauce. Add the parsley, transfer to a warmed bowl, and serve immediately.
Makes an excellent steak or hamburger topper. Or, serve over brown/wild rice as a side dish.
